Ingredients
1 cup Sunbay Yellow Gravy Base
1 cup water (for diluting the gravy)
1 cup boiled mixed vegetables
½ lb paneer (cottage cheese), cubed
1 tbsp oil
1 tsp cumin seeds
1 tbsp ginger, chopped
1 tbsp garlic, chopped
1–2 green chillies, chopped
¼ cup onion, chopped
2 tbsp Sunbay Onion Tomato Masala
1 tsp Kashmiri red chilli powder
1 tsp coriander powder
½ tsp garam masala
¼ cup fresh cream
2 tbsp fresh coriander, chopped
Salt to taste
Method of Preparation
Step 1: Prepare the Gravy Base
Dilute the Sunbay Yellow Gravy Base with an equal quantity of water and mix until smooth and lump-free.
Step 2: Prepare the Tempering
Heat oil in a pan over medium heat. Add the cumin seeds and allow them to crackle.
Step 3: Build the Masala
Add the chopped ginger, garlic, green chillies, onion, and Sunbay Onion Tomato Masala. Sauté until aromatic and the onions become soft.
Step 4: Add the Spices
Mix in the Kashmiri red chilli powder, coriander powder, garam masala, and salt. Stir well to combine.
Step 5: Add the Vegetables and Paneer
Add the boiled mixed vegetables and paneer cubes. Toss gently until they are evenly coated with the masala.
Step 6: Add the Gravy
Pour in the prepared Sunbay Yellow Gravy Base and mix thoroughly. Simmer on low heat for 5–6 minutes, allowing the vegetables and paneer to absorb the rich flavors.
Step 7: Finish & Serve
Stir in the fresh cream, garnish with chopped fresh coriander, and serve hot.
Chef's Tips
Add the paneer towards the end of cooking to keep it soft and tender.
Use seasonal vegetables such as carrots, beans, cauliflower, and peas for the best flavor and texture.
Finish with a drizzle of cream and a pinch of garam masala just before serving for a rich restaurant-style presentation.
