Ingredients

  • 1 cup Sunbay White Gravy Base

  • 1 cup water (for diluting the gravy)

  • 1 cup fresh methi (fenugreek leaves), chopped

  • ½ cup green peas

  • 1 tbsp oil

  • 1 tsp cumin seeds

  • 1 tbsp garlic, chopped

  • 1–2 green chillies, chopped

  • ¼ cup milk

  • ¼ cup fresh cream

  • ½ tsp white pepper powder

  • ½ tsp garam masala

  • 1 tsp sugar

  • Salt to taste

Method of Preparation

Step 1: Prepare the Gravy Base

Dilute the Sunbay White Gravy Base with an equal quantity of water. Mix until smooth and lump-free.

Step 2: Prepare the Tempering

Heat oil in a pan over medium heat. Add the cumin seeds and allow them to crackle. Stir in the chopped garlic and green chillies, and sauté until fragrant.

Step 3: Cook the Vegetables

Add the chopped methi leaves and green peas. Sauté for 2–3 minutes until the methi wilts and the peas are lightly cooked.

Step 4: Season the Curry

Add the salt, white pepper powder, garam masala, and sugar. Mix well, then add a little water and bring the mixture to a gentle boil.

Step 5: Add the Gravy

Pour in the prepared Sunbay White Gravy Base and stir until well combined.

Step 6: Finish with Milk & Cream

Add the milk and fresh cream while stirring continuously to create a smooth, rich, and velvety gravy. Simmer gently for 2–3 minutes.

Step 7: Serve

Serve hot while the gravy is creamy and aromatic.

Chef's Tips

  • Lightly blanch the methi leaves before cooking if you prefer a milder flavor.

  • Avoid boiling the gravy vigorously after adding the milk and cream to maintain its silky texture.

  • Finish with a small knob of butter or a drizzle of fresh cream for a premium restaurant-style presentation.
