Ingredients
1 lb chicken
2 tbsp Springburst Piri Piri Marinade
2–3 tbsp water (for the marinade)
1 cup Springburst Mild Breading Mix
10 cups maida (refined flour) (to maintain the 1:10 ratio with the breading mix)
Method of Preparation
Step 1: Prepare the Marinade
In a bowl, combine the Springburst Piri Piri Marinade with water to form a smooth marinade.
Step 2: Marinate the Chicken
Coat the chicken pieces evenly with the marinade and refrigerate for at least 3 hours to allow the flavors to fully develop.
Step 3: Prepare the Coating
Mix 1 cup of Springburst Mild Breading Mix with 10 cups of maida (refined flour) until evenly combined.
Step 4: First Coating
Dredge the marinated chicken pieces thoroughly in the breading mixture.
Step 5: Double Coat for Extra Crispiness
Dip the coated chicken pieces into cold water for about 10 seconds, then place them on a perforated tray or wire rack to drain excess water. Coat the chicken once again with the breading mixture to create an extra crispy crust.
Step 6: Fry & Serve
Deep-fry the chicken in preheated oil at 180°C (350°F) until golden brown, crispy, and fully cooked. Drain excess oil and serve hot with your favorite dip or sauce.
Chef's Tips
Marinating overnight produces even juicier and more flavorful fried chicken.
Double coating creates a thicker, crunchier crust with excellent texture.
