Tender, smoky, and deeply flavorful, Patthar Ke Kebab is a legendary Hyderabadi delicacy traditionally cooked on a scorching hot stone, giving the meat its signature charred exterior and succulent interior. Marinated with aromatic spices, hung curd, mustard oil, and ginger garlic paste, these kebabs deliver an authentic restaurant-style experience that's perfect as a premium appetizer.
Prepared using Springburst Patthar Ke Marinade, this recipe ensures consistent flavor, excellent tenderness, and authentic Hyderabadi taste for restaurants, catering services, and barbecue menus.

Ingredients
0.60 lb lamb escalopes (thin slices)
0.03 lb Springburst Patthar Ke Marinade
0.03 lb water
0.02 lb mustard oil (for authentic North Indian flavor)
0.022 lb ginger garlic paste
0.088 lb hung curd
Method of Preparation
Step 1: Prepare the Initial Marinade
In a bowl, mix the Springburst Patthar Ke Marinade with the water to form a smooth paste.
Step 2: First Marination
Apply the marinade evenly over the lamb slices and allow them to rest for 20 minutes.
Step 3: Prepare the Final Marinade
Add the ginger garlic paste, mustard oil, and hung curd to the marinated lamb. Mix thoroughly until the meat is evenly coated with the rich marinade.
Step 4: Marinate
Refrigerate the lamb for 2 hours to allow the flavors to penetrate and tenderize the meat.
Step 5: Cook the Kebabs
Traditionally, cook the kebabs on a hot stone (patthar). Alternatively, cook them on a hot tawa or in a preheated oven at 200–210°C for 18–20 minutes, turning halfway through to achieve an even sear.
Step 6: Serve
Serve hot with your favorite accompaniments.
Chef's Tips
Mustard oil adds authentic flavor—heat it lightly before using to mellow its sharpness.
Lamb leg or rump slices work best for tender, juicy kebabs.
Finish with a quick charcoal smoke for a traditional Hyderabadi aroma if a stone is not available.
