Ingredients

  • ½ lb paneer cubes

  • 1 tbsp Springburst Achari Marinade

  • 1–2 tbsp water

  • 2 tsp mustard oil (or cooking oil)

  • 2 tsp ginger garlic paste

  • 3 tbsp hung curd

Method of Preparation

Step 1: Prepare the Marinade Base

In a bowl, combine the Springburst Achari Marinade with water and mix into a smooth paste.

Step 2: Coat the Paneer

Add the paneer cubes and coat them evenly with the achari paste. Let them rest for 10 minutes.

Step 3: Prepare the Final Marinade

Add ginger garlic paste, mustard oil, and hung curd to the paneer. Mix gently until every piece is evenly coated in the thick marinade.

Step 4: Marinate

Cover and refrigerate for 30 minutes to allow the flavors to develop.

Step 5: Cook the Paneer

Preheat an oven or tandoor to 230°C (450°F). Arrange the marinated paneer on skewers or a baking tray and cook for about 5 minutes, or until lightly charred and heated through.

Step 6: Serve Hot

Serve immediately with mint chutney, onion rings, and fresh lemon wedges.

Chef's Tips

  • Mustard oil provides the authentic North Indian achari flavor; heat it slightly before using to mellow its sharpness.

  • Avoid overcooking the paneer to keep it soft and juicy.

  • Add capsicum and onion chunks to the skewers for a classic tandoori presentation.
