Pour in water and bring the curry to a gentle simmer.
Step 5: Add the Chilli Powder
Add Kashmiri chilli powder and mix well for rich color and balanced heat.
Step 6: Cook Until Tender
Add salt according to taste, cover, and cook for 10–12 minutes until the chicken becomes tender and fully cooked.
Step 7: Adjust & Finish
Adjust the consistency if required and finish with freshly chopped coriander.
Step 8: Serve Hot
Serve immediately with roti, naan, or steamed rice.
Chef’s Tips
Bone-in chicken adds deeper flavor to the curry.
For a richer texture, finish with a small spoon of ghee before serving.
Simmering on low heat helps the chicken absorb the masala beautifully.
Technical Note
To avoid a raw chilli taste, mix the Kashmiri chilli powder with a little water before adding, or add it only after liquid has been introduced into the gravy.
