¼ cup fried onion flakes
2 tbsp fresh mint
¼ cup fresh coriander leaves
Whole spices (bay leaf, cloves, cardamom, cinnamon) – a few each
1 tbsp oil
3 tbsp ghee & cream mixture
1 tsp salt or to taste
Method of Preparation
Step 1: Prepare the Rice
Wash and soak basmati rice for 30 minutes. Boil in ample water with salt and whole spices until the rice is about 90% cooked. Drain and keep aside.
Step 2: Marinate the Chicken
In a bowl, combine chicken with:
Ginger paste
Garlic paste
Curd
Turmeric powder
Red chilli powder
Salt
Mix well and rest for 15 minutes.
Step 3: Cook the Chicken
Heat oil in a pan over medium flame and lightly sauté the marinated chicken.
Step 4: Add the Biryani Base
Add the Sunbay Hyderabadi Biryani Base along with 2 tbsp water. Simmer for 5–10 minutes until the chicken is nearly cooked and the gravy thickens slightly.
Step 5: Layer the Biryani
In a heavy-bottomed vessel, spread the partially cooked rice evenly over the chicken gravy.
Step 6: Add the Garnishes
Sprinkle:
Hyderabadi Biryani Base Seasoning (optional)
Fried onion flakes
Fresh mint
Coriander leaves
Ghee & cream mixture
Step 7: Dum Cooking
Cover the vessel tightly and cook on low flame (dum) for 5 minutes to allow the flavors to blend beautifully.
Step 8: Rest & Serve
Switch off the heat and let the biryani rest for 2 minutes. Gently fluff the rice and serve hot.
Chef’s Tips
Use long-grain aged basmati rice for the best aroma and texture.
