Ingredients
⅔ cup Sunbay Curry Masala Gravy (RTE)
½ lb chicken, boiled
3 tbsp + 1 tsp chicken stock
1½ tbsp oil
1½ tbsp fresh cream
1 tsp kasuri methi (dried fenugreek leaves), crushed
1–2 tbsp fresh coriander, chopped (for garnish)
Method of Preparation
Step 1: Heat the Oil
Heat oil in a kadai or deep pan over medium flame.
Step 2: Sauté the Gravy
Add the Sunbay Curry Masala Gravy and sauté for 2–3 minutes until aromatic and slightly glossy.
Step 3: Adjust the Consistency
Pour in the chicken stock and mix well to achieve the desired gravy consistency.
Step 4: Add the Chicken
Add the boiled chicken pieces and stir thoroughly so the chicken is evenly coated with the masala gravy.
Step 5: Simmer
Cover and simmer on medium heat:
10–12 minutes for bone-in chicken
8 minutes for boneless chicken
This allows the flavors to blend beautifully.
Step 6: Add Cream
Stir in fresh cream to create a smooth, rich texture.
Step 7: Finish with Kasuri Methi
Sprinkle crushed kasuri methi over the curry and mix gently to enhance aroma and flavor.
Step 8: Garnish & Serve
Switch off the heat, garnish with fresh coriander, and serve hot.
Chef’s Tips
For deeper flavor, add a small knob of butter before serving.
