Ingredients

  • 1 cup Sunbay Chettinad Gravy

  • 1 lb boneless chicken leg

  • 1 tbsp ginger garlic paste

  • 1½ tbsp oil

  • 1 tbsp curry leaves

  • ½ tsp mustard seeds

  • Salt to taste

  • ¼ cup water (optional, to adjust consistency)

  • ¼ cup coconut milk

Method of Preparation

Step 1: Prepare the Tempering

Heat oil in a pan over medium flame. Add mustard seeds and curry leaves, allowing them to crackle and release their aroma.

Step 2: Sear the Chicken

Add the boneless chicken along with ginger garlic paste. Sear well until the chicken is lightly browned and aromatic.

Step 3: Cook Until Tender

Add water if required and cook the chicken until tender and fully cooked.

Step 4: Add the Chettinad Gravy

Add the Sunbay Chettinad Gravy and simmer on low flame for 5–6 minutes until the gravy thickens slightly and coats the chicken beautifully.

Step 5: Finish with Coconut Milk

Pour in the coconut milk and stir gently. Adjust salt according to taste.

Step 6: Serve Hot

Serve immediately with steamed rice, appam, dosa, or flaky Malabar parotta.

Chef’s Tips

  • Chicken thigh or leg meat works best for juicy, flavorful results.

  • For extra heat, add crushed black pepper while simmering.

  • Coconut milk should be added at the end to maintain its creamy texture.
