Ingredients

  • 1 tbsp Sunbay Red Chilli Cooking Base

  • 1½ tsp Sunbay Ginger Paste

  • 1½ tsp Sunbay Garlic Paste

  • ½ tsp Spicefield Turmeric Powder

  • 1 tsp Spicefield Kashmiri Red Chilli Powder

  • ½ lb boneless chicken cubes

  • 1½ tsp soy sauce

  • 1 tsp vinegar

  • 1½ tbsp oil

  • Salt to taste

Optional Additions

  • Curry leaves

  • Sliced onions

Method of Preparation

Step 1: Marinate the Chicken

In a mixing bowl, combine the chicken cubes with:

  • Sunbay Garlic Paste

  • Sunbay Ginger Paste

  • Sunbay Red Chilli Cooking Base

  • Soy sauce

  • Vinegar

  • Turmeric powder

  • Kashmiri red chilli powder

  • Salt

Mix thoroughly until the chicken is evenly coated.

Step 2: Rest the Marinade

Cover and marinate for 1 hour to allow the flavors to penetrate the chicken.

Step 3: Stir-Fry the Chicken

Heat oil in a wok or heavy-bottom pan over high heat. Add the marinated chicken and stir-fry for 8–10 minutes until fully cooked and lightly charred around the edges.

Step 4: Enhance the Flavor (Optional)

For extra Andhra-style flavor, toss in fresh curry leaves and sliced onions during the final minute of cooking.

Step 5: Serve Hot

Serve immediately as a spicy appetizer, starter, or side dish.

Chef’s Tips

  • High heat is key to achieving smoky flavor and slight charring.

  • Add green chillies for an even spicier Andhra-style kick.
